ECUADOR – MICROLOT – FINCAS MAPUTO Y HAKUNA MATATA – HONEY PROCESS
The farms Maputo and Hakuna Matata are owned by Henry & Verena Gaibor. They met in 1996 while volunteering for Doctors Without Borders: Henry is a war-trauma surgeon from Ecuador, and Verena is a war nurse from Switzerland, and they met in the field during a humanitarian crisis in Burundi.
Typica is one of the root varieties of Coffea Arabica, a mutation of one or more selections from Ethiopia planted in Yemen & then transplanted to Java by the Dutch in the 17th century. The farms are in La Perla, Nanegal (Pichincha) near Colombia. Humidity is high, & a mist often hovers over the coffee fields in the afternoon. It becomes much cooler at night, & the unique combination of characteristics gives their coffees a very special quality.
